Mike Clark's Chili Recipe

 Cook Time 6-7 hours
1 1/2 pounds beef roast cut into pecan sized chunks
1 pound andouille sausage
1/2 pound bacon
1 7oz can of chipotle peppers
1 32oz carton of beef broth
12 oz tomato paste
1 cup diced yellow onion
1 cheap beer
1 tsp paprika
1 tsp cayenne pepper
Your favorite hot sauce, Crystal or Louisiana works well 


  • Brown the beef chunks in a skillet, and then place them in the bottom of a large slow cooker. Slice the sausage and layer it on top.  Fry the bacon as normal, saving about a 1/4 of rendered fat.  Chop the bacon add it to the slow cooker, drizzling the fat on the top.  Add the rest of the ingredients except for the hot sauce. Slow cook until it’s wore out, about 6-7 hours.  Add hot sauce to taste shortly before serving.
